Marcel Baey sells his salmon directly to consumers

Marcel Baey is taken over by a Polish company and now belongs to Suempol France.

 

Specialising in the production of smoked salmon, the Marcel Baey company, located in Capécure in Boulogne-sur-Mer, sells a thousand tons of salmon in France every year. Founded in 1948, the company almost faced closure in 2013. Following economic difficulties, the Polish company Suempol then took it over.

Today, Marcel Baey is recovering from this troubled period and in the process of its development, it has invested almost 2 million euros. It still offers the top-of-the-range product whose manufacturing process was set up by Marcel Baey. The production of the "à la ficelle", dry-salted, and beech wood-smoked salmon has remained the same for years. The company only works with salmon certified according to International Food Standard (IFS).

In order to develop its brand, the company is opening to a local clientèle. Until recently, the only period when the products were directly sold to consumers was at Christmas. Now, direct purchasing is possible all year round at the production site. The company also intends to sell its products abroad, especially in Poland.

A new product will soon be processed by the Boulogne plant. “ We are currently developing a salmon steak , ” explains Jean-Yves Sergent, one of the managers. Smoked, then cooked at 65 °C in a new generation oven, this product will allow Marcel Baey to introduce a new dynamic. “The company is experiencing a very positive phase at the moment so we are trying different things. We really do not want to re-live what happened seven years ago.”
