Herring in abundance : Marinated, smoked, rolled, with herbs, in butterflied fillets... This is the speciality of Friesenkrone, a german company founded in 1904 by the Schwarz family, who are still in charge. A specialist in fast food, it supplies products to be prepared in burgers, tartines, tapas, blinis, wraps, with original marinades, such as red beetroot marinade. “Herring accounts for 90% of our products,” recounts Ronald Horn, sales manager for the retail market. “It comes mainly from Norway and Denmark.” It is prepared in Bremerhaven at one of the company’s three plants, packed at the main factory in Marne and stored at the logistics site in Hamburg, 60 km from Marne.

The company also cooks smoked salmon, from Norway, and mackerel. “All are good quality products, certified MSC, ASC or Global gap, a necessary requirement of the German market. “With batches of 1.2 kg for the catering industry, which accounts for 45% of its turnover and new products for the retail market under the Tide brand: a range of fresh fish-based ready meals with their accompaniment, in trays, to be put in the microwave oven (to be kept between 0 and 2°C in the supermarket) as well as ready-to-eat salads in trays, spoon included, with a separate compartment for adding seeds at the last minute, to be kept between 0 and 7°C. The company is careful to limit the salt content of these preparations. “Ready-to-eat meals are the future,” explains Ronald Horn. Its market is mostly German, “for 99%”. And if all the raw material come from imports, “we are the last company of this size to produce everything in Germany,” Horn emphasizes.
